Tiring Weekend... but got a lot done ;-)

I am still hoping there will be more holiday comingnext week.... but obviously I just can dream about it:P I am tired now.... what a long weekend. Thrusday was a holiday due to New Year celebration, I didn't do much on that day, just chill at home because it is so hot outside. I don't like dry heat, I like the heat in Malaysia:P I miss the rain too.

Friday was at work. I have been scanning babies nowadays.... sometimes good , sometimes bad.... sometimes you have such fat mother that scanning them almost break my arm.... (tomorrow isMOnday.. I hope I dont get any fat mom)

Saturday was great because I went to my usual combat class. It was awesome. After that I head to the library to get some books returned. I was so hungry that I want to eat a roast chicken when I see them selling it in the supermarket... but the chicken didn't look very good.... so I decided to roast my own chicken. I bought a free range chicken, happily go home to make my lovely roast chook:D Here is the recipe ( This is my first roast chicken)

Roast Chicken
  • 1 free range chicken
  • salt
  • pepper
  • 1 lemon
  • 1 red onion
  • 1 tablespoon of honey with 2 tablespoon of water
  1. Preheat oven 22oC
  2. Scrub the chicken with salt ,rinse with water
  3. dry the chicken with kitchen towel
  4. Cut lemon into half to squeeze the juice out then cut it into quarter
  5. Cut onion into quarter
  6. Rub lemon juice all over chicken, inside-out.
  7. Rub salt and pepper all over chicken, inside-out.
  8. Put the used lemon and onions into chicken cavity.
  9. Tie the chicken drumstick with kitchen spring if you want. ( I skip this)
  10. Put chicken into oven , roast for 45-60 mins at 200C

SUnday has been hectic. Started with putting my laundry into the washing machine and going to the local farmer's market to get my weekend fruits and veggie. Fruits that in season now are grapes, peach, nectarin, plum, cherry ... yummm..... i love all of the above except NECTARIN:P i dont like them:P I still have leftover roast chicken so I figured to make warm chicken salad :D Got all my Ingredients and head home. Laundry in the machine is done so I have to put it on the clothesline and put the second batch of my laundry into the machine , which is my bed sheets. Got myself change and go to the gym for an hour. Laundry's done , goodie, all under the sun. HAd a quick shower and time to feed my tummie:D

Warm Chicken Salad with Orange Juice Dressing
  • Roast chicken breast
  • the leftover red onion (the stuffing from yesterday roast chicken)
  • Spinish (amount depend on how much do u want to eat)
  • a few cherry tomatoes, cut into half
  • 1 apricotcut into slices
  • a few cherries, pitter and cut into half
  • sun-dried tomatoes, cut into thin slices
  • 1 hard boiled egg, cut into quarter
  • Juice of 1 orange (you can use the rind for salad)
  • 1 table spoon of worchester sauce
  • 1 teaspoon of rice vinegar
  • 1 teaspoon of dijon mustard
  • 1 tablespoon of olive oil
  1. Put all the veggie , fruits and egg into the plate, as shown below







2. In a saucepan, drizzle some olive oil ,put a few roasted chicken breasts and the red onions into the pan.

3. Pour orange juice, worchester sauce, rice vinegar and dijon mustard into pan.

4. Lightly sauté the chicken with this lovely mixture.

5. Turn off the heat when the juice is almost dry and the chicken is well coated with the dressing.

6. Pour chicken over the veggie. VOila :D





This is stir-fried fish fillet with ginger and spring onion:D That's dinner :D good with rice or rice porridge :D Very simple dish. All you need is Fish, light soy sauce, pepper, salt, spring onion, ginger and oil. First, heat the oil, put in the ginger with some chopped onions, till you can smell the fragrant of them. Add in the fish, stir fry it. Add some soy sauce and some water, simmer it. Add the spring onions when you are almost done. :-D Quick meal.





And for tomorrow Breakfast I made buns.... that is my sunday. Now , I need to go to bed .... very tired :-P Cheers :-D

Fluffy Banana Cake

I have been slacking :P I didn't make anything last weekend. Oh well, I did make a Orange Butter cake last week but I didn't make a post about it ...hehe because I was a lazy bump:P BUT I am back to business this weekend :D I made Banana cake, I bought these huge bananas last Sunday and purposely not finishing them so that I can make Banana Cake this Sunday. Initially, I wanted to make Coconut Banana bread but I ran out of coconut flakes:P So I settled with Banana cake which turned out to be excellent :D here is the recipe :D

Banana Cake
Ingredient A
  • 200g All Purpose Flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda

Ingredient B

  • 2 large banana (about 300g)
  • 1 tsp cinnamon powder
  • 1 tsp vanilla essence

Ingredient C

  • 180g butter
  • 150g castor sugar

Ingredient D

  • 1 egg, lightly beaten

Instruction:

  1. Preheat oven to 175 C, grease the cake pan.
  2. Mash and mix Ingredient B.
  3. Cream Ingredient C.
  4. Add banana mixture into creamed butter and sugar, mix well.
  5. Sift Ingredient A into mixture and add beaten egg. Mix well.
  6. Pour cake mixture into cake pan.
  7. Bake for 40 mins or till tooth pick come out clean.

PS: You could also add choc chips or any favorate nuts to spice it up a lil:D





My lunch is Braised chicken with potatoes :) Easy dish that my mom make all the time :-D

Ingredients
  • Half a chicken ( about 400 g), skinned and cut into small pieces
  • 3 medium size potatoes, skinned, cut into wedges
  • 3 shallots, slice thinly
  • adequate oil
  • salt
  • 2-3 tsp light soy sauce (or more.. to your own taste buds)
  • 1/2 tsp dark soy sauce
  • 1 cup of water
  • 1tsp corn flour with 1/4 cup of water

Instructions:

  1. Put some oil into frying pan, heat it up
  2. Pan-fry potatoes till gold in color
  3. Put potatoes into a pot.
  4. Put some oil into frying pan again, heat up the oil.
  5. Add shallots into hot oil, stir fry till gold in color.
  6. Add chicken into pan, stir-fry chicken with shallot for 3 mins
  7. Add 1 cup of water into pan, simmer for 3 mins.
  8. Add dark soy and light soy sauce into chicken, simmer for another 3 mins.
  9. Pour chicken and sauce into pot with potatoes.
  10. Cook in low fire for 30 mins.
  11. Add cornflour mixture, boil for 1 min. Serve with rice :D

Simple soft milk bread

Another Sunday :) Time flies, I didnt do any major cooking this week, just managed to make this bread. I must say thank you to Happy Home Baker from SIngapore for sharing this recipe :D this is the link to the recipe http://happyhomebaking.blogspot.com/2007/08/almost-square.html I made a slight alteration to the recipe, I have added 40grams of milk powder into the dough and I used salted butter (so I have omitted the salt in the recipe) And also, If you are blur as me.. and have no idea on how to roll the dough , this is the place to look http://www001.upp.so-net.ne.jp/e-pan/sandwiches/sandwiches.htm I don't know how to read japanese but there is an illustration that show you how to roll the bread out. Try it, it's nice.

I am so tired today, woke up with soreness everywhere on my body ... from my arms to my thighs... hehe, too much gym, too much weights :P So, I decided to stay home today, not going to torture myself with more gym. Instead, I was hapilly watering the roses and pruning them, also sweeping the front yard and back garden. I did my laundry, clean the house and of course, bake and cook :D I love weekends, if only weekdays are like weekend :P Breakfast was great, I had chicken sausages with veggie omelette, a cup of tea and my sweet Hokkaido bread with butter and cheddar cheese .. yum.... oh yes... cherry tomatoes:P too much for a breakfast :P :unch is just simple minestrone soup. Around afternoon, I decided to bake.... becoz i have overiped bananas and a bag of cornflakes that sit around for ages:P I just want to get rid of it. Therefore I made muffins that consists of banana, cornflakes, pinenuts and choc chips .... :D I am greedy:P Dinner time I had stir-fried seafood noodles :D Goodie :D

Veggie Lasagna and Hokkaido sweet bread

It's Saturday again, time for me to do some major cooking :D I started my cooking on friday night... where I suppose to be at the gym lol lol :P Anyway, I went to the supermarket and got all the ingredient i need to make lasagna. Now, I must confest, I didnt make the lasagna sheet, lol, i bought them fresh :D but i grilled the eggplant and tomatoes :D This is my first lasagna, I never make them but I want to eat them.... that is what you get when you are in a foreign land and going out to eat alone is not the best thing to do.. lol... so i made a small lasagna that could last me my dinner, tomorrow's lunch and dinner :D isn't that great :P and since today is a Saturday , I try to bake something new. I made Hokkaido Sweet bread . This bread is really REALLY soft, I had never baked such soft bread . It's like cotton:D SWEET:D
