Fluffy Banana Cake

I have been slacking :P I didn't make anything last weekend. Oh well, I did make a Orange Butter cake last week but I didn't make a post about it ...hehe because I was a lazy bump:P BUT I am back to business this weekend :D I made Banana cake, I bought these huge bananas last Sunday and purposely not finishing them so that I can make Banana Cake this Sunday. Initially, I wanted to make Coconut Banana bread but I ran out of coconut flakes:P So I settled with Banana cake which turned out to be excellent :D here is the recipe :D

Banana Cake
Ingredient A
  • 200g All Purpose Flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda

Ingredient B

  • 2 large banana (about 300g)
  • 1 tsp cinnamon powder
  • 1 tsp vanilla essence

Ingredient C

  • 180g butter
  • 150g castor sugar

Ingredient D

  • 1 egg, lightly beaten

Instruction:

  1. Preheat oven to 175 C, grease the cake pan.
  2. Mash and mix Ingredient B.
  3. Cream Ingredient C.
  4. Add banana mixture into creamed butter and sugar, mix well.
  5. Sift Ingredient A into mixture and add beaten egg. Mix well.
  6. Pour cake mixture into cake pan.
  7. Bake for 40 mins or till tooth pick come out clean.

PS: You could also add choc chips or any favorate nuts to spice it up a lil:D





My lunch is Braised chicken with potatoes :) Easy dish that my mom make all the time :-D

Ingredients
  • Half a chicken ( about 400 g), skinned and cut into small pieces
  • 3 medium size potatoes, skinned, cut into wedges
  • 3 shallots, slice thinly
  • adequate oil
  • salt
  • 2-3 tsp light soy sauce (or more.. to your own taste buds)
  • 1/2 tsp dark soy sauce
  • 1 cup of water
  • 1tsp corn flour with 1/4 cup of water

Instructions:

  1. Put some oil into frying pan, heat it up
  2. Pan-fry potatoes till gold in color
  3. Put potatoes into a pot.
  4. Put some oil into frying pan again, heat up the oil.
  5. Add shallots into hot oil, stir fry till gold in color.
  6. Add chicken into pan, stir-fry chicken with shallot for 3 mins
  7. Add 1 cup of water into pan, simmer for 3 mins.
  8. Add dark soy and light soy sauce into chicken, simmer for another 3 mins.
  9. Pour chicken and sauce into pot with potatoes.
  10. Cook in low fire for 30 mins.
  11. Add cornflour mixture, boil for 1 min. Serve with rice :D

Simple soft milk bread

Another Sunday :) Time flies, I didnt do any major cooking this week, just managed to make this bread. I must say thank you to Happy Home Baker from SIngapore for sharing this recipe :D this is the link to the recipe http://happyhomebaking.blogspot.com/2007/08/almost-square.html I made a slight alteration to the recipe, I have added 40grams of milk powder into the dough and I used salted butter (so I have omitted the salt in the recipe) And also, If you are blur as me.. and have no idea on how to roll the dough , this is the place to look http://www001.upp.so-net.ne.jp/e-pan/sandwiches/sandwiches.htm I don't know how to read japanese but there is an illustration that show you how to roll the bread out. Try it, it's nice.

I am so tired today, woke up with soreness everywhere on my body ... from my arms to my thighs... hehe, too much gym, too much weights :P So, I decided to stay home today, not going to torture myself with more gym. Instead, I was hapilly watering the roses and pruning them, also sweeping the front yard and back garden. I did my laundry, clean the house and of course, bake and cook :D I love weekends, if only weekdays are like weekend :P Breakfast was great, I had chicken sausages with veggie omelette, a cup of tea and my sweet Hokkaido bread with butter and cheddar cheese .. yum.... oh yes... cherry tomatoes:P too much for a breakfast :P :unch is just simple minestrone soup. Around afternoon, I decided to bake.... becoz i have overiped bananas and a bag of cornflakes that sit around for ages:P I just want to get rid of it. Therefore I made muffins that consists of banana, cornflakes, pinenuts and choc chips .... :D I am greedy:P Dinner time I had stir-fried seafood noodles :D Goodie :D

Veggie Lasagna and Hokkaido sweet bread

It's Saturday again, time for me to do some major cooking :D I started my cooking on friday night... where I suppose to be at the gym lol lol :P Anyway, I went to the supermarket and got all the ingredient i need to make lasagna. Now, I must confest, I didnt make the lasagna sheet, lol, i bought them fresh :D but i grilled the eggplant and tomatoes :D This is my first lasagna, I never make them but I want to eat them.... that is what you get when you are in a foreign land and going out to eat alone is not the best thing to do.. lol... so i made a small lasagna that could last me my dinner, tomorrow's lunch and dinner :D isn't that great :P and since today is a Saturday , I try to bake something new. I made Hokkaido Sweet bread . This bread is really REALLY soft, I had never baked such soft bread . It's like cotton:D SWEET:D

Pandan Jam Swiss Roll

This is the first time I tried making swiss roll..... err.... not that successful but I tried my best to salvate it. I spread the cake batter too thin.... it's very difficult to tear the baking sheet from the cake... and I made a mess. This is the end product. I only managed to make a small pandan swiss roll... 3 pieces.

Coconut Bun

I have left over coconut in the freezer ..... I wonder what should I do with them. Mom told me to cut it into thin slices and coat the coconut flesh with caramel....... nice idea... however, I suddenly crave for coconut bun....gwahahaha so I made coconut bun and kaya bun. FIrst I made kaya... after that I grated the coconut and made the filling for coconut bun, which is grated coconut cooked with palm sugar:)

Recipe for Roti canai

First, I must apologize that I didn't post this yesterday. (*sorry *sorry*) I had a long long day on Monday. I woke up at 5.30am so that I can go to gym at 6am... but i was lazy..haha so i slept till 5.55am then jumped out of bed, still I was in the gym at 6.15 :D gwahahahahaha :D 7.30am I was home eating breakfast and 8am start walking to work.

For some reasons, one third of my patients didnt turn up... that is FANTASTIC!!!!! because they normally just hang around in my work place and giving me pressure:p It was a great day. Before I know it, it's the end of the day and doing my last patient, she is pregnant but unsure when was her last period.

I went home hopping with joy...hehe... then went to buy a big packet of chips (salt and vinegar ) My housemates were having a bad day, so I offered them my very unhealthy and full of trans-fat chips.... hehe... they are unhealthy but make people happy :P

After that I got myself change and went BELLY DANCING ..woohoo :D finally back to business :D I enjoyed my time and the dancing . It was fun and i learnt lots of stuff but this is an expensive place so I dont think I will join it . I will just stick to my gym routine :D

When I got home, it was just in time for dinner. B and L made dinner for me. :) very nice of them :D So I had a long long Monday:)

Now roti canai recipe ..hehe :)

  • 2 cups of flour
  • 1 egg (lightly beaten)
  • 1/3 cup water (add this bit by bit)
  • 1/3 cup milk
  • 2 tblsp melted margerine
  • 3 tblsp sugar
  • 1/2 tsp salt
  1. Put flour, sugar and salt into a mixing bowl.
  2. Add in egg and margerine into flour mixture, mix it.
  3. Add milk into mixing bowl and start kneading it to form a nice non-stick dough (takes about 20 mins of kneading)
  4. Now, divide one big dough into 10 small round balls and coat it with oil.... u can soak them in oil actually hahahaha but nah... coat them with oil or margering so that they dont stick to each other.
  5. Let the small roti canai dough rest for 1 hr ( you can use this one hour to make dahl)
  6. Coat your hands and kitchen table with oil.
  7. Take one dough, spread it with your palm and fingers till very thin, put some oil on dough surface.
  8. Flip the dough to the other side and do the same thing, spread it thin.
  9. You can twirl the flattened dough if you have the skill of the mamak who sell roti canai or you can do it my way..hahahaha, keep spreading it with your palm. Although the mamak way is better... but I am yet to master that skill.
  10. Once you get a very thin, flattened though, fold the sides to the center, like folding a blanket.
  11. Let it rest for 10 mins, flatten it with your palm and fingers again before u pan-fried it.:)

Dahl Recipe

  • 1 cup of red or yellow lentils (check the label whether soaking is required)
  • 1 tsp of coriander seed/ powder
  • 1 tblsp of tumeric powder
  • 1 tsp chili powder
  • 1/2 tsp of black mustard seeds
  • 1/2 tsp of yellow mustad seeds
  • 1 tsp of cumin seeds
  • 1 tblsp oil
  • 3 medium size potato, cut into small cube shape
  • 3/4 cup water
  • 1 chopped onion
  • salt and pepper to taste
  1. Wash the lentils (I used lentils that doesn't need soaking) with water, boil it with 3 cups of water.
  2. In frying pan, heat oil up.
  3. Put in cumin seeds and onions into heated oil.
  4. Stir-fry the onion till fragrant, add in potato.
  5. Cook potato and onion for 3 mins or so, add in the rest of the spices.
  6. Add water into frying pan, let it simmer for 4 or 5 mins.
  7. Pour the potato, onion and spices from the frying pan into the pot of boiling lentils. Serve :D

So I have decided to make my own roti canai:D I found a recipe online and decided to follow it and I also make dahl with potatoes :D the roti making is difficult and messy....coz I have never tried making it even once... blame the mamak for spoiling me too much:P hehe here are the end product of my breakfast :D

First blog post

This is my frist blog post. My sister and friends have been asking me to start a blog for a long time... but I always have excuses to say no ..haha. FInally, I get over my laziness and start this little project of mine. This blog contains materials of random babling, food preparing, fitness craving and many more.





One of the reason I start this blog because this will just simply get my closer to my friends, I miss all my family and friends. So, I hope this is keep them update and keep me going too. Alright , first post ... FOOD ... I am going to talk about food. I love weekend because that is the only time when I can cook.... and cook ... and cook... (okie... may be bake too:P ) though i can't eat all the things I made but I love sharing it with my hosuemates. That is the good thing of having housemates cause I can stuff their tummies too...gwahahahaha, I am evil:P
Today is a Saturday, as usual, I wake up in the morning, put my clothes onto the clotheslines , brushed, cleaned and went to combat .. YEAH, good old combat where I can scream, kick, punch all I want to release the stress within me, nourish my heart and soul .... most importantly keep my sanity:P After my combat class, I went to the shopping centre to get a ceramic pot so that i can use it to make my soup of the day ---> Double boiler :D

Sorry, I have drifted ..... yes, food:P Marble cake and 椰汁炖鸡 (aka double-boiled chicken soup with coconut juice ) Both taste great though my marble cake looked more like choc cake:p (coz i was too greedy when I was adding cocoa powder into my batter:P )hehe you can see my so-called marble cake... which.. look more like a choc cake.. but looks can be deceiving coz the cake taste really good:) The soup is really good. I didn't have it for a long time because it involves a lot of hardwork .... (getting the coconut juice from those old hard coconut shell:P ) I wanted to use 3 old coconut juice,so I bought 3 coconut but NOOOOOOOO.. one of the coconut gone bad:P so I resolved to 2 coconut. Brendan helped me drilled 2 holes into the coconut so that i can get the juice then we used an axe to smashed the shell, so that we can get the flesh...lol... such fun:P


Enough for now:) need to catch some sleep.... and think what should I make tomorrow:p ciao
